A dish that I created this week. I call it Pork Carnitas but that's probably some bastardization of the carnitas term. So be it. Pork cut into bite sized pieces, juice from two oranges, 1 red bell pepper, 1 onion, a cup or so of green onions, 3 cloves of chopped garlic. Mix all together and marinate for an hour or so then throw it all in a hot cast iron skillet until it's nicely seared. Serve on top of a flour tortilla with some freshly chopped red peppers, onions, and chives with a little lime juice.
It turned out very nice.
